Do I need an account?

No. Everything works on your phone without one. An account is only needed to share a group, a game or a live match, and to keep two phones in sync.

How do I back up my matches?

Settings → Data Backup → Export. You get a file you can keep anywhere and restore later.

I updated from version 1: where is my Catan?

It is a game like the others on the Games tab. The first time you open the new version, your Catan matches are brought over and a backup is made first.

How do I delete my account and data?

The account button on the Games tab → Delete Account. See the privacy policy for what that removes.

How do I watch a friend's match?

Open the link or scan the QR code they show you from the Live screen. You need to be signed in, and they need to have shared the match with you or turned on "Anyone with the link".
